"Ian Damms of Breeze and Freeze is a valued member of the Steering Group for the UK/NZ Link Foundation's Culinary Challenge.  This is an annual award given to a young chef in the UK who competes for a prize-winning trip to New Zealand to study  ingredients, food suppliers, food culture  and, above all, top restaurants in NZ.  The NZ winner travels to the UK for a similar experience.  For each winner this is a wonderful opportunity to expand their professional horizons, gain invaluable experience and to work with some of the world's finest chefs.  Ian's involvement enables us to provide a show case for NZ venison and to raise the profile of this superior ingredient amongst restaurants and colleges, and amongst young chef entrants.  For the 2009 competition, Ian contributed a short seminar on NZ venison for the benefit of the finalists, invited guests and some lucky catering students from Kingsway Westminster College.  For most it was the first time they had ever heard of this product and had the chance to taste it.   In addition to his involvement with the planning and execution of the competition, Ian also captures the critical moments of the competition and the subsequent Awards evening.  His comany records the finalists' cook-off (still photography and video), including displays of the finished dishes, and swiftly edits these for presentation later the same day at the Awards event.  This skilfully edited footage helps guests and sponsors to see for themselves the challenge faced by the young chefs who have progressed to the final.  His photos shot at the Awards evening capture the essence of the event and provide a permanent record for the young chefs, especially the winner and runner-up.  The footage and stills are also invaluable in enabling the Foundation to promote the competition both in the UK and in NZ, as well as securing publicity for the competition eg in the trade press.  Ian's involvement in all the crucial planning stages means that he has an excellent understanding of what the Foundation requires and how best to communicate the purpose and impact of the Awards."
